This 5-minute avocado chicken salad is incredibly convenient if you are on-the-go, or in need of a meal in almost no time at all. The only ingredients you really need are precooked chicken, avocados, lime juice and a splash of olive or avocado oil. Simply mash the avocado in a bowl, add in your chicken, lime juice and oil and mix.
You could stop right here and be perfectly happy, or you could add in some fresh herbs like cilantro or green onions, some garlic powder and a pinch of salt. It you buy canned chicken, the ingredients don’t even need to be refrigerated before assembling, making it a fantastic option when you have no access to a fridge or microwave.
I scooped the avocado chicken salad into lettuce leaves and ate them like wraps. The best part of these, in my opinion, was the creamy avocado. You seriously don’t miss having dairy in this chicken salad at all.
Additionally, since there is not very much liquid added, the lettuce wraps are not at all messy to eat. There is zero liquid dripping, which makes it extra fun to eat on to go and easy to clean up.
There are so many ways this avocado chicken salad can be used. You can use it as the meat in tacos, or top a bed of fresh spinach or arugula with it. You could also add a scoop of it to a salad with a boatload of fresh veggies like peppers, onions and pico de gallo, mmmm sounds wonderful.

Ingredients
- 2 10 oz. cans chicken cubed and pre-cooked, water drained
- 2 avocados
- 2 tbsp extra virgin olive oil or avocado oil
- Juice of 1 lime or lemon
- handful of cilantro or green onions
- pinch of salt I love this Himalayan pink salt
- 1/4 tsp garlic powder or 2 cloves fresh
Instructions
