I am someone who thoroughly enjoys easy meals and snacks. The simpler the better cuz I ain’t got time for time consuming recipes most days.
So naturally, I LOVE lunches where there is ZERO cooking, microwaving or baking required. Particularly on those days where it’s hot, and I certainly don’t want to heat up the house even more by turning on the oven. Who’s with me?
I was trying to come up with some good multi-purpose recipes that are great for summer get-togethers, but also serve double-duty as a quick lunch recipe, and something with cucumber cups just leapt out at me. Seriously, how cute are these cucumber cups??

Alright, let’s jump into the recipe! You’ll want to chop the ends off your cucumber, and peel it if you desire. I like to leave some of the skin on, but not all of it, so I peeled mine into stripes.
Next, slice into approximately 1 inch tall rounds. Hollow out the middle with the spoon, leaving a bit of the insides intact at the bottom so the filling doesn’t just fall out when you pick them up.
Speaking of the filling, it couldn’t be easier to make. Simply spoon the innards of the cucumber into a bowl and add half an avocado and some canned precooked salmon. Mash it all together and add salt and pepper to taste. Simply spoon the filling into the cucumber cups. And that’s all she wrote!

Avocado Salmon Cucumber Cups
Ingredients
- 1 cucumber
- 1/2 cup canned salmon precooked
- 1/2 avocado
- garlic powder, salt and pepper to taste
Instructions
- Chop ends off cucumbers and peel, if desired.
- Slice into one inch rounds. Using a small spoon, carve out the center of the cucumber rounds, leaving a bit in the bottom so you can pick them up without the filling falling out.
- Add the seeds to a bowl with the salmon, avocado and salt and pepper. Mix thoroughly. Spoon mixture into the cucumber cups.

Loved the idea. Just a little bland for us. So I added some onion and garlic powder to the mixture. Went over well.
