These crunchy chili chickpea veggie bowls are a sure-fire winner for your family. They’re gluten-free, grain-free, vegan and dairy-free!

I was vegetarian on and off throughout my teen years, and fully vegetarian/vegan during my college and graduate school years. I did it for numerous reasons, primarily because I thought it was the healthiest choice.
During that period of time, I struggled with extreme acne, terrible headaches, bloating and very bad lethargy. It turned out that I had several very bad food sensitivities that I lived with for many years.
Being vegetarian meant that I ate more of the foods I was intolerant of, most prominently gluten. I’m not trying to knock the vegetarian and vegan lifestyle – in fact I often find myself wanting to return back to it for ethical and spiritual reasons.
But when it comes to being gluten and corn free because of food sensitivities, you have already severely limited your food options. Take meat out of the picture and there is not much left.
Eating out becomes downright impossible. Reintroducing meat afforded me with a world of options when it comes to traveling, dining out, etc.
I’ve gotten more creative about coming up with vegetarian and even vegan recipes that I can still eat without having the ever-present guilt of meat eating. These chili chickpea veggie bowls are a really easy way to eat healthy as a gluten-free vegetarian.
It’s also super tasty for those of you who are not vegetarian, but are wanting to experiment with Meatless Mondays, or something similar.
Healthy eating can still be super tasty!
Did you know you can roast chickpeas in the oven and they come out crunchy and delicious? These crunchy chickpea snacks are the perfect substitute on a salad, in place of croutons. They’re also great as a snack, or as a topping in those recipes where you just need a crunchy element, such as this one!
All you need to do is drain a can or two of chickpeas, toss them with some olive oil and your favorite spices, and stick them in the oven for around 25 minutes.
They come out crispy and flavorful, so delicious!
While those are in the oven, you can saute your favorite veggies in a pan on the stove. I started with olive oil, peppers and onions. I also steamed sweet potatoes in the microwave.
I added some baby greens to a bowl, then topped it with half a sweet potato, the cooked peppers and onions, avocado, the crunchy chickpea snacks, and some avocado. Top with avocado cilantro lime dressing and dig in!

Crunchy Chili Chickpea Veggie Bowls (Gluten-Free, Grain-Free, Vegan)
- 1/2 batch crunchy chili chickpea snacks linked above
- 2 bell peppers chopped
- 1/2 onion chopped
- 2 medium sweet potatoes
- 1 bag baby greens mix
- 1 avocado
- 1 batch avocado cilantro lime dressing linked above
- Follow instructions for the crunchy chickpea snacks with chili seasoning.
- While chickpeas are roasting, heat large skillet with olive oil over medium heat. Cook peppers and onions until soft.
- Poke holes in sweet potatoes and microwave until soft, approximately 6-8 minutes.
- Make a batch of avocado cilantro lime dressing.
- To a salad bowl, add a big handful of baby greens. Top with sweet potato, peppers and onions, avocado and crunchy chickpeas. Pour avocado cilantro lime dressing on top.
