It’s about time to break out the sparklers and red, white and blue apparel again. The Fourth of July is rapidly approaching, as is the warm weather. Can you believe it’s summer already?
It seems like only a few days ago I was writing about being ready for spring, and it’s already over! Craziness. These coconut berry popsicles are perfect for this time of year since it’s really starting to warm up. These yummy coconut berry popsicles are so foolproof that you really don’t need a recipe for them. They are made using only three simple ingredients – raspberries, coconut water, and blueberries (hence – red, white and blue). They’re fruity, healthy and so simple! You can use fresh or frozen berries – I used one of each.
The coconut water is refreshing and nutty and the berries are sweet and tangy. A perfect combination for a warm day spent outside on a picnic. These coconut berry popsicles are sure to please, since it makes more than enough to share with friends and family.
You could add some strawberry chunks, watermelon, or some cherries if you feel like customizing.

Fourth of July Three-Ingredient Coconut Berry Popsicles (Vegan, Gluten-Free, Whole30)
- 3/4 cup blueberries fresh or frozen
- 1 cup raspberries fresh or frozen
- 2 cups coconut water
- Place blueberries and raspberries into popsicle molds. If you don't have molds, you can use paper cups with popsicle sticks.
- Fill to the top with coconut water.
- Freeze for 6 hours, or overnight.
