Gluten-free rolls that are super simple and delicious! Quick and easy for those busy nights where you still want some comfort food. With an option for sweet rolls! Grain-free, Paleo, ketogenic, low-carb, dairy-free.
Sometimes you just want some fresh-baked rolls with a big slab of melted butter on top, am I right? Rolls are perfect as a side for pretty much any meal, but there are certain times when meals feel like they’re missing something without rolls.
They’re just the best with Italian style one-pot meals like a meat sauce with pasta, or a delicious creamy Asiago chicken dish.
These gluten-free rolls are soft and moist on the inside, with a nice crisp on the outside. They hold up well, but are not so dense that you struggle to get through eating one. These rolls are also incredibly nutritious and filling, and will certainly stop any bread cravings you have dead in their tracks.
These gluten-free rolls are easy peasy to make, as well. You’ll start by mixing the coconut flour, psyllium husk powder (more on this in a minute), salt and baking soda together in a bowl. Make sure you remove the clumps from the coconut flour, so it can be fully mixed with the wet ingredients.
Speaking of wet ingredient, next you’ll want to add in your eggs, boiling water and apple cider vinegar. Mix everything together and form into balls. I recommend making them the size you want your rolls to be when cooked, the dough will not expand much while it bakes.
You could also make these into sweet rolls, if you want a change of pace. Simple add in a few tablespoons of honey, or your favorite sweetener for low-carb., and you’ll be all set!
If you make your rolls big enough, they make an awesome sandwich, which you can fill with some lunch meat, or make a grilled chicken Parmesan sandwich.
If you are not aware, I discussed the benefits of psyllium husk powder in my coconut flour pizza crust recipe. I find that the psyllium husk powder adds a more bread-like texture, which definitely keeps the whole traditional bread vibe going when it comes to low-carb, gluten-free bread.
Psyllium husk helps to bind the ingredients together, like gluten does in regular bread. One thing to note is that depending on the brand of psyllium husk you use, it may turn your rolls a purple color. Don’t be alarmed!

Gluten-Free Rolls
Ingredients
- 1/2 cup coconut flour
- 2 tablespoons psyllium husk powder
- 1/4 teaspoon Salt I love this Himalayan pink salt
- 1/2 teaspoon baking soda
- 3 eggs
- 1/2 cup boiling water
- 1 teaspoon apple cider vinegar
Instructions
- Preheat oven to 350F.
- Add coconut flour, psyllium husk powder, salt and baking soda to a bowl. Mix until combined and clumps are removed.
- Add eggs, boiling water and apple cider vinegar to the dry ingredients and mix until incorporated. Allow dough to rest for a few minutes if the consistency is too watery. You should be able to roll the dough out with your hands without them being too sticky. Add a little more coconut flour if necessary.
- Roll dough into 4-6 balls and place onto a baking sheet.
- Bake for 20-25 minutes or until golden brown.

Raw on the inside and crispy on the outside. Used applesauce instead of eggs.
