Are you ready for some healthy keto brownie bread?
What happens when you have an urge to make brownies, but don’t have a brownie pan? You improvise and make brownies in a bread pan and they turn out like a delicious brownie/bread hybrid!
So I decided to make the most of it and post it anyway, because the minimalist in me definitely does not need an additional pan in my tiny kitchen. Plus this brownie bread was WAY too good to pass up.
Taste-wise, it is definitely spot on. If you think of a brownie/bread hybrid, this is exactly what you would end up with. A slightly fluffier texture, but all the taste of a super thick and rich brownie.
And I would be lying if I told you I never ate this for breakfast. It was SO indulgent, I just could not resist 🙂
Time for some baking!
For this recipe, you’ll need the following dry ingredients: granulated erythritol, almond flour, cocoa powder and gelatin. You will also need the following wet ingredients: butter or coconut oil (melted) and several eggs.
Lastly, you’ll need some chocolate chunks or chips. Yay for recipes with minimal (but still totally delicious) ingredients!
And if you are familiar with my recipe style, you know easy is the only way I will make things. Simply mix all the wet ingredients in one bowl, and the dry ingredients in another bowl.
Add the wet ingredient into the dry, and stir gently. Once fully mixed, gently fold in half of the chocolate chunks/chips.
Grease a baking dish and toss in the batter. Top with the remaining chocolate chunks/chips and bake until fully cooked.
Can I substitute the almond flour for another type of flour?
This is one thing I cannot endorse yet, as I have not tried it personally for this recipe. It could work, but I do not know from experience. Plus, it could impact the texture of the bread, so the result may not be as desirable. If you want me to try experimenting with a particular type of flour, please let me know in the comments below!

Healthy Keto Brownie Bread
Ingredients
Dry Ingredients
- 1/2 cup granulated erythritol (96 g) I like the Pyure Stevia Blend
- 1 cup blanched almond flour (112 g) I like the Natures Eats brand
- 1/3 cup cocoa powder (35 g)
- 1 0.25 oz packet gelatin
Wet Ingredients
- 1/3 cup butter or refined coconut oil (melted) (5.33 tablespoons)
- 3 large eggs
Other Ingredients
- 2 oz chopped dark chocolate or chocolate chips (90% and above is best, or sugar-free)
Instructions
- Preheat oven to 350F.
- Mix all dry ingredients together in a bowl. Mix all wet ingredients together in another bowl. Fold in half of the chocolate chips/chunks gently.
- If mixture is too thick, add in water one tablespoon at a time until the batter thins out a bit.
- Grease a bread pan with coconut oil or butter.
- Pour mixture into the bread pan and top with remaining chocolate chips/chunks.
- Bake for 30-35 minutes, or until bread raises in the center and begins to harden around the sides. Note: the toothpick method may not work well here if you stick the toothpick into a chocolate chip, it will not come out clean, even if the bread is cooked.
- Allow to cool before handling/slicing.

What can I use instead of gelatin? I am vegetarian.
You can omit the gelatin, it is not a critical ingredient, it just makes it a bit chewier. I’ve made it without and it turns out fine 🙂
Can i use coconut flour instead of almond flour ?
Hi Rasha. I have not tried this, but generally speaking, you can usually use 1/4 cup coconut flour to replace 1 cup almond flour. The bread might not have as much volume though, and the texture will be a bit different. It should still taste great though 🙂 Let me know how it turns out if you try it!
I have osteoarthritis and have found oat flour works with my body. Are there recipes that i can substitute other flours with oat flour.
Hi Barbara, sorry to hear about your osteoarthritis. I have not worked with oat flour personally, but based on some quick research I did, it looks like oat flour can be approximately substituted 1:1 with almond flour. You can try replacing the almond flour in my recipes with oat flour and see how that works. You may need to add a bit more liquid (another egg or some extra water or milk) to get the right consistency. It may alter the texture, but I doubt it will be significant. Hope that helps!

Hi Marion, thank you for your comment! You can leave out the gelatin, it is not a crucial ingredient. It just makes the texture a bit more chewy, but it should taste fine without it. Hope you enjoy!
Hi, will this ride without baking powder?
Yes, it does rise a bit. It is fairly dense though, somewhere between a brownie and bread. You shouldn’t need the baking powder, unless you want it to rise a lot and be fluffier, like bread.

what are the dimensions of the pan you used?
I used a standard bread loaf pan, which is 8-1/2 x 4-1/2 x 2-1/2 inches.

Hi! I substituted 1/8 cup, roughly, of arrowroot powder to help with the texture. Also, I put everything in a high speed blend for air entrainment and added a teaspoon of baking powder. Cream cheese, vanilla, and powdered serve for frosting. My kids and I loved it.

Hi Laurie, any granulated sweetener should work that is approximately a 1 to 1 substitute for sugar.

Hi Marie, it is sold already blanched. You can tell if it’s blanched because it will not have any of the dark skins in the almond flour. It should all be light in color like the inside of an almond. Hope that helps!
What kind of gelatin do you use?
Hi Peggy, the Knox brand is easy to find at your local grocery store, but I also like buying grass-fed gelatin when possible. I usually have to buy it online though, it’s not as common in stores.
