Then you’re in luck, because this no-bake edible cookie dough is the perfect treat! Oh, and did I mention that it’s also low-carb, ketogenic, sugar-free, gluten-free, grain-free, can easily be made dairy-free and Paleo friendly? While it might seem that there would be nothing left to eat after that list, I promise that they’re still quite delicious!
So what ARE they made of?
These delicious little treats are made of coconut flour, butter (or ghee for dairy-free), heavy cream (or coconut milk for dairy-free), a granulated sweetener of your choice, vanilla extract and, of course, chocolate chips or chunks…the star of the show!
How do I make them?
So you can probably gather from the ingredients, roughly how to make these super-easy cookie dough bites. It’s pretty simple, as most no-bake recipes are. Start by melting your butter or ghee, and to it, you’ll want to add some granulated sweetener, heavy cream or coconut milk and vanilla extract.
Once these ingredients are well mixed, add in your coconut flour and mix until the dough can be formed into nice solid balls. If the dough becomes too crumbly, you’ve added too much coconut flour. Add in another splash of cream/coconut milk.
Luckily, this is one of those recipes that is very forgiving. You can tweak it repeatedly until you get the desired consistency. Once you are there, simply mix in your chocolate chips or chunks, and form into balls. Place in the fridge for just a little while, until they harden up nicely. Then they’re all ready for the fun to begin!
Can I substitute another type of flour for coconut flour?
Yes, of course you can! However, this does require a few caveats. The amount you need will very much depend on the type of flour you are using. Coconut flour is very absorbant, so you only need a small amount of it to get the right consistency.
If you are using almond flour or another type, know you will likely need to add more in place of the coconut. This is something you will have to experiment with and see how much is necessary.
If you want to give another flour a try, I would recommend adding all of the other ingredients to the bowl first and mixing them together. Add your flour, approximately two tablespoons at a time until you can form the dough into nice sturdy balls without it being too crumbly.
No-Bake Cookie Dough Bites
- 1/4 cup butter or ghee melted (57 g)
- 2 tablespoons granulated sweetener coconut sugar for Paleo, erythritol or a stevia/erythritol blend for low-carb
- 2 tablespoons heavy cream or coconut milk
- 1/4 teaspoon vanilla extract or vanilla bean powder
- 1/4 cup coconut flour (28 g)
- 2 squares chopped dark chocolate or a handful of chocolate chips (20 g)
- Add all ingredients except chocolate to a bowl and mix until combined. You want the texture to be such that the dough can easily formed into balls. If the mixture is too liquidy, add more coconut flour. If it's too crumbly, add in more heavy cream or coconut milk.
- Stir in chocolate chips.
- Use a small cookie scoop or your fingers to form balls with the mixture. I made approximately 8 balls roughly 1 inch (2.5 cm) in diameter.
- Place balls in the fridge until they harden, 15-20 minutes.
