What could be better than nutella cookies?? These are easy, tasty and also gluten-free and grain-free!
A delicious holiday indulgence
Nutella is one of those treats that I used to love so much (and still do!) but rarely ever eat. There’s way too much sugar, and I tend to not eat too much dairy these days either.
However, I do LOVE hazelnuts, and will grab a ferrero rocher once in a blue moon (I know, sinful!).
Since it’s the midst of the holiday season, I just couldn’t resist making these nutella cookies as a special treat.
This is the kind of recipe I will make once for special occasions, because they are by no means on anyone’s diet plan, that’s for sure. But they’re SO delicious, the indulgence is worth it, I promise.
These nutella cookies are also quick and easy to make!
The reason I call these cookies an indulgence is because they contain a boatload of nutella. That deliciously creamy, rich and incredibly sweet dessert spread. So make sure you have a container on hand, along with the following ingredients:
- One egg
- Almond flour, preferably blanched
- Chopped hazelnuts
- White chocolate chips
You’ll want to mix the nutella with the egg and almond flour and stir until fully-incorporated. Fold in the chopped hazelnuts and white chocolate chips. Roll the dough into balls approximately 1 inch in size and place them on a baking sheet lined with parchment paper.
Bake in a preheated oven for 8-10 minutes. Because the cookies are dark, going by the edges browning is not a good indicator. They could already be burnt at that point. So just take them out after 10 minutes, and allow them to cool.
Why is there no sugar added to this recipe?
The nutella already has quite a bit of sugar, enough to sweeten the cookies sufficiently. If you are someone who likes your desserts extra sweet, then you can add another 2-4 tablespoons of sugar to the batter.
Where can I find hazelnuts?
I bought mine at Trader Joes, but I do understand they are hard to find elsewhere. If your grocery store does not carry them, they can be purchased online, or they can be omitted from the recipe.
