A delicious Paleo chocolate chip banana nut bread made with coconut flour, lots of ripe bananas, walnuts and chocolate chips. Not too sweet, this is a healthy bread recipe perfect for breakfast, dessert or any time in between! Paleo, dairy-free, gluten-free and grain-free.
Banana bread is one of those foods that is acceptable for pretty much any meal. It’s welcome for breakfast, snack time, as a side with a meal, and for dessert. So really, there is no bad time to eat banana bread. That becomes especially true when it’s not loaded with sugars, gluten, grains or dairy.
I love finding new and exciting ways to evolve my recipes. I started with this plain coconut flour bread recipe, and now I’m really enjoying the process of adapting it in all sorts of different ways. The possibilities are so endless. This Paleo chocolate chip banana nut bread was one of my recent creations.
It’s an easy and delicious recipe that I will certainly be making again and again. It’s especially delicious when it’s loaded with chocolate and walnuts, as any banana bread should be.
Plus, making it is a piece of cake as well! You only need one bowl to do all of the mixing, so cleanup is quick and easy. Start by melting your coconut oil in the microwave. To the oil, add your bananas and mash with a fork until smooth. If you can’t get them really smooth, no worries. You can either leave it as is, or use an immersion blender to puree them further.
To the coconut oil and banana puree, add your honey and mix again. Add baking soda, eggs, and your sifted coconut flour. If you are too lazy to sift, as I am sometimes, you can just use a fork to remove the clumps in the coconut flour. You just don’t want any big clumps in the mixture, and this is the easiest way I’ve found to prevent that from occurring.
Once your batter is all mixed together, add in your walnuts and chocolate chips, and any other desired ingredients. Mix one last time, and then add to a greased bread tin. Find something to keep yourself occupied for 45 minutes, and then it’s time to taste!
I hope you enjoy this incredibly simple and tasty Paleo chocolate chip banana nut bread, I ate a piece of it just a few minutes ago, and boy was it still tasty a few days after making. I don’t think you’ll be disappointed!
