So we’ve been camping at Acadia National Park for almost a week now, and while our RV does have a lot of modern conveniences, it can get challenging to make extravagant meals. Sticking to easy and quick meals makes cooking (and cleaning!) so much less stressful.
Not to mention that keeping tons of cookware and kitchen gadgets in a kitchen that covers about 10 square feet is nearly impossible.
That’s where easy meals like this microwave omelet for one really shine. There are so great for numerous reasons, starting with that it can be mixed, cooked and consumed in just one container. Whether that be a mug, a ramekin, a cup of some other kind, or a small bowl, cleanup is a breeze.
It’s also pretty much foolproof to stir up and cook. Simply beat two eggs with a fork, mix in some cream, cheese and whatever additions you like. I recommend some salt, pepper and spices of your choice. Microwave for just a few minutes, and it’s time to enjoy!
Omelets like this one also go super well with tomatoes, avocado, peppers and onions and lots of other veggies, so feel free to mix in or top your cooked omelet with whatever you desire!

A few weeks ago, Shane announced on DnSAdventures that we were going to be traveling the country full-time in our RV, which will be happening at the end of June. So be ready for me to incorporate a bit more regarding travel into my recipes!
I’m super excited to be able to incorporate more regarding what it’s like to travel and cook in a very small space. It will certainly make me a more interesting and creative cook!
