An easy one-pan meal!
The holiday time can be so tiring when you’re running around putting up decorations, buying gifts and traveling all over the place.
Meal time can be challenging on those days. If you’re anything like me, it can be super tempting to grab some to-go food. With just a little planning ahead and a little bit of prep time, you can make a delicious dinner entirely on a sheet pan!
If it’s not enough food for you, you can simply cook some rice or cauliflower rice on the side, for a full meal! If you buy the frozen cauliflower rice (my favorite), then there is practically no prep time at all for that.
Your prep time will literally be less than it would to drive somewhere to pick up food. You can’t beat that!
These sheet pan spiced pork chops are downright delicious!
If you thought this meal would be challenging to prep, then you’re definitely in for a surprise! You simply need to chop up the veggies into cubes, then place them onto the baking sheet with the pork chops.
Melt some coconut oil and pour on top of the veggies and pork chops. Stir to coat them evenly.
Then, simply mix the spices together in a bowl. You’ll need cinnamon, cloves, salt and pepper. Evenly spread half of the mixture on top of the pork chops and veggies. You can use a small spoon to ensure you evenly distribute the spices.
Flip over the pork chops and stir the veggies, and spread the other half of the spice mixture on top. Place the pan into a preheated oven, and bake until the veggies are soft and the pork chops are cooked through. I cooked at 350F (175C) for approximately 45 minutes.
I don’t like sweet potatoes, what other sides could I make?
Not a problem! You could use regular potatoes instead with some broccoli or spinach. You could also do radishes for a lower-carb meal, with some brussels sprouts.
You can really use any veggie or starch that you like, as long as it’s somewhat neutral in flavor, and you don’t mind it having a cinnamon spice mixture on top of it.
