The perfect accompaniment to some summer BBQ, this simple tomato, onion and cucumber salad is incredibly simple and delicious! Vegan, gluten-free, grain-free, dairy-free, Whole30, Paleo, ketogenic, low-carb.
So I have to be honest, I am eating this salad as I write this, and thoroughly enjoying every moment of it. I am definitely someone who is more into salty and tangy foods, as opposed to sweets.
Plus, I am a huge fan of the health benefits of apple cider vinegar, especially the good stuff with “The Mother”. I remember doing shots of ACV way back in college in the hopes that it would help with my terrible acne.
And no, the ACV did not help in that instance, but that’s because my diet was also a hot mess back then. I am a firm believer in the health benefits of it, when also taken in combination with a healthy diet.
But no, you don’t have to be taking shots of ACV to be getting the benefits. If you’re into quick-pickled vegetables, that is a great way to enjoy it as well. This tomato, onion and cucumber salad is a tasty and nutritious side dish, where you get all of the same benefits!
When I say that this side dish is simple to make, I truly do mean it. All you really need is a bit of foresight (or a timer app), because you will need to make this salad a bit ahead to allow time for it to marinate.
Simply chop up your veggies anywhere from four hours to one day in advance of when you plan to serve it, then toss in your apple cider vinegar and whatever seasoning you’d like.
I didn’t add anything to mine, but salt and pepper, or some fresh basil would be fantastic in it. Simply mix to coat all the veggies and then toss it into the fridge until ready to serve.
The longer you allow it to marinate, the better. You will also find that the leftovers taste even better, if you have any left, that is 🙂

Simple Tomato, Onion and Cucumber Salad
Ingredients
- 3 medium tomatoes chopped
- 1/2 small red onion sliced
- 1 medium cucumber chopped
- 3 tablespoons apple cider vinegar
- Salt and pepper to taste
- fresh basil, if desired
Instructions
- Mix tomatoes, red onion and cucumber together in a bowl.
- Add in apple cider vinegar and stir to coat all of the veggies.
- Place in the fridge for anywhere from 4 hours to 1 full day before serving, to allow the vinegar to mildly pickle the veggies.
- Store in the fridge in an air-tight container for up to a week.
