First, let’s talk about how simple it is to make. Start by chopping up those cauliflower florets into bite-sized pieces. If you prefer your pieces bigger or smaller, go for it. Just adjust the cook time accordingly. Melt your butter or ghee and mix in your salt, rosemary and minced garlic, and give that a good mix.
Add the florets to a large bowl and add in the garlic, butter, salt and rosemary mixture. Toss to coat the cauliflower. You want it to be as evenly distributed as possible. Tasty Garlic Rosemary Roasted Cauliflower (Low-Carb, Keto, Paleo)
Ingredients
- 1 large head cauliflower
- 2 tbsp butter or ghee
- 1/2 tsp Salt I love this Himalayan pink salt
- 4 sprigs fresh rosemary
- 4 cloves fresh minced garlic
Instructions
- Preheat oven to 400F.
- Chop head of cauliflower into small florets and pour into a bowl.
- Melt butter or ghee and add in salt. Pour mixture over cauliflower and stir to coat.
- Mince garlic and remove rosemary leaves from stems. Toss into bowl and stir to combine.
- Pour into a medium baking dish and place in oven for 20-25 minutes.
- Remove from oven and allow to cool 5 minutes before consuming.
