You would not believe how hard it is to convey the message I’m trying to get across in a simple title. I want to succinctly get across that this soup is a perfect way to use up your leftovers from previous days.
Toss whatever meat and veggies you have lying around into a crockpot, add in some chicken broth and a few other ingredients to round it out, and let it simmer for several hours. What could be easier?
Soups like these are great for those days when you really don’t have time to make dinner, but still want to eat nutritiously and without guilt. As long as you have just a few minutes to prep your ingredients and toss them into the crockpot, you are pretty much set.
For the base of this hearty soup, I highly recommend making some homemade bone broth, which can easily be made ahead of time and refrigerated or frozen until you’re ready. This way, you get all of the nutrition-packed benefits of collagen and gelatin from the bones.
Bone broth is also a fantastic way to get extra vitamins and mineral into your diet, plus it’s so warming and cozy for those lingering cold days. If you’re too pressed for time to make your own broth (I totes understand), you can use store-bought broth. If you can find organic bone broth, go for it, although this is by no means necessary.
To make the soup, start by tossing your broth into the crockpot, followed by your veggies, cooked meat, salt, pepper and whatever seasoning you like. For my soup, I added carrots, spinach, diced tomatoes, cannelini beans, rosemary and sliced kale sausage that I had browned previously. Just let it all simmer for several hours, stirring occasionally, and soon you’ll have a hearty meal with almost no effort!

Toss In Your Leftovers Soup
Ingredients
- 4 cups chicken or beef broth Here is my homemade bone broth!
- 2 cups chopped veggies of your choice I used carrots
- 2 cups greens of your choice I used spinach
- 1 can beans omit for Paleo or low-carb
- 1 can diced tomatoes
- 1 lb precooked meat I used kale sausage which I browned and then sliced
- 1 handful fresh herbs Rosemary, oregano and basil all work well here
- Salt and pepper to taste
Instructions
- Cook meat if it isn't already cooked.
- Toss all ingredients in the crockpot and set to low. Simmer for 4 hours, stirring occasionally. That's all there is to it...enjoy!

We can’t always use fresh herbs, can we use dried herbs instead
Yes of course! That should work just fine. I would recommend somewhere between a teaspoon and a tablespoon, depending on the herb you choose.
