A spicy and flavorful hot beverage, this coffee-free cinnamon vanilla pumpkin latte is the perfect fall drink! Low-carb, sugar-free, Paleo, vegan and dairy-free.

Ingredients

  • 4 tablespoons 100% pumpkin
  • 2 cups unsweetened almond or coconut milk (16 oz)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla bean powder or vanilla extract
  • stevia (for low-carb) or coconut sugar (for Paleo) to taste

Instructions

  • Heat almond or coconut milk until steaming.
  • Mix in pumpkin, cinnamon, vanilla and sweetener. If there are still clumps of pumpkin, use an immersion blender until creamy and smooth. Top with coconut cream and additional cinnamon, if desired.
