Servings: 4 fritters

Ingredients

  • 1/4 cup coconut flour (32 g)
  • 2 tablespoons dry sweetener I recommend Swerve or pyure for low-carb or coconut sugar for Paleo
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1/4 cup almond or coconut milk (60 mL)
  • 1/2 apple chopped into 1/2 inch cubes, you can reduce the amount for low-carb if the carb count is too high
  • 1/4 cup coconut oil for frying

Instructions

  • Heat coconut oil in a pan over medium heat.
  • Mix coconut flour, sweetener and cinnamon in a bowl and mix, ensuring that all clumps are removed from coconut flour. Mix eggs and milk of choice in with dry ingredients until well-combined. Mix in apple cubes and stir.
  • Drop a tiny bit of batter into the hot oil. It should sizzle and turn a golden brown slowly. If it turns black or golden brown very quickly, the oil is too hot. Turn down the heat a bit and wait a few minutes if this happens.
  • Drop spoonfuls of batter into the pan and flatten slightly. Allow to cook until the edges are golden brown. Flip and cook until the other side is golden as well.
