Gluten-Free Rolls

Gluten-free dinner rolls that are super simple and delicious! Quick and easy for those busy nights where you still want some comfort food. With an option for sweet rolls! Grain-free, Paleo, ketogenic, low-carb, dairy-free.

Ingredients

  • 1/2 cup coconut flour
  • 2 tablespoons psyllium husk powder
  • 1/4 teaspoon Salt I love this Himalayan pink salt
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1/2 cup boiling water
  • 1 teaspoon apple cider vinegar

Instructions

  • Preheat oven to 350F.
  • Add coconut flour, psyllium husk powder, salt and baking soda to a bowl. Mix until combined and clumps are removed.
  • Add eggs, boiling water and apple cider vinegar to the dry ingredients and mix until incorporated. Allow dough to rest for a few minutes if the consistency is too watery. You should be able to roll the dough out with your hands without them being too sticky. Add a little more coconut flour if necessary.
  • Roll dough into 4-6 balls and place onto a baking sheet.
  • Bake for 20-25 minutes or until golden brown.

Notes

Note: for sweet rolls, add in 3 tablespoons of honey or sweetener of choice for low-carb when you mix in the wet ingredients. If you use honey, you may need a bit more coconut flour because the dough will be stickier.
