Mix almond flour, coconut flour, eggs and sweetener together in a bowl. Toss in blueberries and gently mix. If the mixture is too thick, add in a splash of water. If too thin, add in a teaspoon of extra coconut flour.
Add a tablespoon of coconut oil to a pan, and turn heat to medium. Once hot, add spoonfuls of the batter. Once the edges begin to brown flip. Repeat as needed to use up batter.
