Avocado Salmon Cucumber Cups

These avocado salmon cucumber cups are a super simple and quick appetizer, perfect for a party snack or a 5 minute lunch! Gluten-free, grain-free, low-carb, ketogenic, dairy-free, Whole30, Paleo.

Ingredients

  • 1 cucumber
  • 1/2 cup canned salmon precooked
  • 1/2 avocado
  • garlic powder, salt and pepper to taste

Instructions

  • Chop ends off cucumbers and peel, if desired.
  • Slice into one inch rounds. Using a small spoon, carve out the center of the cucumber rounds, leaving a bit in the bottom so you can pick them up without the filling falling out.
  • Add the seeds to a bowl with the salmon, avocado and salt and pepper. Mix thoroughly. Spoon mixture into the cucumber cups.
