Classic Meat Sauce with Zoodles (Low-Carb, Whole30)

Ingredients

  • 1 lb ground beef (16 oz), I recommend 80/20 grass-fed
  • 1 tablespoon coconut oil
  • 15 oz can tomato sauce without seasoning or sugar added
  • 1 tablespoon Italian seasoning of your choice
  • fresh basil and parsley to taste, reserve a small amount for topping at end
  • Salt and pepper to taste
  • 2-3 medium zucchini spiralized or chopped into thin strips

Instructions

  • Cook ground beef over medium heat in coconut oil until browned.
  • Add in tomato sauce, Italian seasoning, most of the fresh herbs and salt and pepper to taste. Simmer over low heat until the sauce thickens, approximately 15-20 minutes.
  • While the sauce is cooking, spiralize the zucchini.
  • Toss zoodles into a second pan over low heat and lightly saute until cooked to your liking.
  • Assemble on a plate, and top with finely-minced fresh herbs, if desire.
