Follow instructions for the crunchy chickpea snacks with chili seasoning.
While chickpeas are roasting, heat large skillet with olive oil over medium heat. Cook peppers and onions until soft.
Poke holes in sweet potatoes and microwave until soft, approximately 6-8 minutes.
Make a batch of avocado cilantro lime dressing.
To a salad bowl, add a big handful of baby greens. Top with sweet potato, peppers and onions, avocado and crunchy chickpeas. Pour avocado cilantro lime dressing on top.
