Ingredients
1/4cupbutter or gheemelted (57 g)
2tablespoonsgranulated sweetenercoconut sugar for Paleo, erythritol or a stevia/erythritol blend for low-carb
2tablespoonsheavy cream or coconut milk
1/4teaspoonvanilla extract or vanilla bean powder
1/4cupcoconut flour(28 g)
2squareschopped dark chocolateor a handful of chocolate chips (20 g)
Instructions
Add all ingredients except chocolate to a bowl and mix until combined. You want the texture to be such that the dough can easily formed into balls. If the mixture is too liquidy, add more coconut flour. If it's too crumbly, add in more heavy cream or coconut milk.
Stir in chocolate chips.
Use a small cookie scoop or your fingers to form balls with the mixture. I made approximately 8 balls roughly 1 inch (2.5 cm) in diameter.
Place balls in the fridge until they harden, 15-20 minutes.
Notes
Notes: You should be able to substitute another flour in for the coconut flour, if you desire. I do not recommend using a regular wheat-based flour, because you need to heat it in order to remove potentially harmful bacteria found in flour.
