No-bake peanut butter energy balls. Made with chia seeds, sunflower seeds, hemp seeds, your favorite nut butter, coconut flour, cocoa powder and sweetener, these are protein-packed and perfect for when you need a boost during a hike or post-workout. Gluten-free, grain-free, ketogenic, low-carb, vegan, vegetarian and plant-based.
1/2cupnut butter of choicenatural, with no added sugar
2tablespoonssweetener of choiceI recommend using something granulated
Mix all ingredients together in a bowl and allow them to sit for 5-10 minutes, so the coconut flour and chia seeds can absorb the moisture from the nut butter. ***see note below about the nut butter
Form into balls and place in the fridge until ready to consume.
A note on the nut butter you choose: I recommend that you use something natural without a bunch of sugar-added. Natural nut butters often separate, leaving the oil at the top. You do not want the oil in this recipe, otherwise the balls will be much too liquidy. Reach down deep in that jar and pull out the harder stuff, that is what you want here.Nutrition Facts (per ball):150 calories per serving, 13 g total fat, 4 net carbs, 5 g protein
