No Flour Chocolate Chip Cherry Blondies (Gluten-Free, Grain-Free, Vegan)

Preheat oven to 400F.
Grind chia seeds in blender, then add in water. Mix until it forms a gelatinous texture.
Drain and dry chickpeas thoroughly with a towel or paper towel.
Add chickpeas, honey, vanilla extract, baking soda and salt into blender, and blend until it forms a thick batter.
Chop cherries into small pieces, being sure to remove all pits and stems.
Mix in cherries and chocolate chips and mix by hand to incorporate.
Spoon batter into a greased baking dish.
Bake in oven for 25-30 minutes.
