Whisk eggs, milk/cream, granulated sweetener, cinnamon and vanilla extract together. Dip slices of bread into the mixture. For extra flavor, allow bread to sit in the mixture for one minute to absorb more of the mixture.
Add soaked bread to the heated pan. Allow to cook until golden brown, then flip and repeat. Move cooked slices to a plate and repeat with remaining slices. Top with desired topping and enjoy.
Store remaining French toast slices in an air-tight container in the fridge for 3-4 days.
