Remove skin from mangoes and chop into small pieces. Add to a bowl, along with chopped red onion, lime juice, jalapeno, salt and pepper. Stir to mix. Place in airtight container in fridge for 30 minutes, or up to 3 days to incorporate flavors. Consume within 5 days.
