A fun holiday meal, these Halloween stuffed peppers will be a treat for the whole family! Stuff with whatever meat and seasoning you want and enjoy. Paleo, low-carb, Whole30.
4orange bell peppersall seeds and white parts removed from inside
1/2lbcooked chicken breastsshredded
1headbroccoli, chopped into small florets
1/4cupsauce of choice
salt and pepper, to taste
Preheat oven to 350F.
Carve orange bell peppers to resemble jack-o-lanterns. If they do not stand up straight, cut a bit off the bottom to keep them upright. In a bowl, mix shredded cooked chicken breast with broccoli, sauce and salt and pepper. Spoon into the orange peppers.
Place bell peppers on a baking sheet and bake for 25-30 minutes or until the peppers are cooked through and the filling is warm. Remove from the oven and allow to cool before serving.
