These triple almond cookies are a delicious treat for the holidays, or for anytime of year! Paleo, low-carb, gluten-free, grain-free.
1-3/4cupblanched almond flour
1/4cupgranulated sweetener of choice
4tablespoonsunsalted butterroom temperature
handful almond slices
Preheat oven to 350F (175C).
Mix almond flour, sweetener, unsalted butter, eggs and almond extract together in a bowl. Knead until all ingredients are fully incorporated. Roll dough into 1 inch (2.5 cm) balls.
Place balls onto a cookie sheet lined with parchment paper. Press balls down to form cookies. These will not expand much while they bake, so they can be placed fairly close together on the sheet. Top with sliced almonds.
Bake in preheated oven for 12-14 minutes, or until the bottoms and edges begin to brown.
