Ingredients
1packagefrozen cauliflower rice or miracle riceuse cauliflower rice for Whole30. If using miracle rice, you may need two packages
1lbground beef
2tablespoonstaco seasoning mixwatch out for non-compliant ingredients if doing Whole30. watch out for carb count if doing keto
5ozsalsa or pico de gallo
1packageshredded lettuce
avocado or guacamole
cilantro, lime, cheese, sour creamomit cheese and sour cream for whole30
1batchcilantro lime sauceoptional
1batchqueso cheeseoptional, omit for whole30
Instructions
Cook cauliflower or miracle rice according to package directions.
Add ground beef and taco seasoning to a pan over medium heat. Cook until no longer pink, stirring occasionally.
Make cilantro lime sauce or queso cheese and set aside temporarily. Once rice and beef are ready, add 1/4 of each to a bowl, and add in salsa, shredded lettuce, avocado, cilantro, cheese, sour cream and any other toppings you like. Top with cilantro lime sauce or queso cheese.
