Ingredients
1mediumsweet potatoor 1 cup canned sweet potato puree
1/2teaspooncinnamon
1tablespoongranulated sweetener of choiceoptional, for a bit more sweetness
1tablespooncoconut flour
2largeeggs
Instructions
Poke holes with a fork into the skin of the sweet potato. Place on a microwave-safe plate and microwave for 10 minutes, or until cooked through.
Preheat waffle maker.
Remove sweet potato skin, and add the inside to a bowl. Mash with a fork and add in remaining ingredients. Stir to combine.
Spray waffle maker with non-stick spray and add in the mixture. Cook until the waffle maker beeps or until the top begins to brown, approximately 4-7 minutes. If your waffle maker is large, it may need more time. Repeat until all batter is used.
Slather with butter and syrup and enjoy.
