These gluten-free apple fritters are a delicious way to treat yourself to some dessert! They are made with coconut flour, eggs, almond milk, cinnamon, sweetener and of course, apple chunks. Gluten-free, grain-free, low-carb, Paleo and dairy-free.

Ingredients
1/4cupcoconut flour(32 g)
2tablespoonsdry sweetenerI recommend Swerve or pyure for low-carb or coconut sugar for Paleo
1/2teaspooncinnamon
2eggs
1/4cupalmond or coconut milk(60 mL)
1/2applechopped into 1/2 inch cubes, you can reduce the amount for low-carb if the carb count is too high
1/4cupcoconut oil for frying
Instructions
Heat coconut oil in a pan over medium heat.
Mix coconut flour, sweetener and cinnamon in a bowl and mix, ensuring that all clumps are removed from coconut flour. Mix eggs and milk of choice in with dry ingredients until well-combined. Mix in apple cubes and stir.
Drop a tiny bit of batter into the hot oil. It should sizzle and turn a golden brown slowly. If it turns black or golden brown very quickly, the oil is too hot. Turn down the heat a bit and wait a few minutes if this happens.
Drop spoonfuls of batter into the pan and flatten slightly. Allow to cook until the edges are golden brown. Flip and cook until the other side is golden as well.
