Ingredients
1large headcauliflowerchopped into florets
2tablespoonsbutter
2tablespoonsheavy cream
2oz.cream cheese
1.5cupscheddar cheese(12 oz/200 g)
4slicescooked bacon
1/4cupchopped green onions(1 oz/30 g)
Instructions
Preheat oven to 350F (175 C).
Add one inch of water to the bottom of a microwave safe container or a large pan. Steam cauliflower in microwave or in a pan over medium high heat until very soft. Drain liquid.
To a blender or food processor, add the steamed cauliflower, butter, heavy cream and cream cheese. Blend until smooth, like mashed potatoes.
Add cauliflower mash to an oven-safe dish and top with cheddar cheese and cooked bacon. Bake for 5-10 minutes or until cheese is melted and cauliflower mash is hot.
Top with chopped green onions. Enjoy!
