Ingredients
1tablespoonbutter, ghee or coconut oil
3squares (30 g)dark chocolateI used 90% dark, and recommend a similar cocoa content
Melt butter in a microwave-safe glass dish. I usually do 15 seconds, stir around, then another 15 seconds. This helps to prevent splatter in the microwave.
Add in 2/3 of the dark chocolate (20 g), and mix until melted. Return to microwave for another 15 seconds if it does not fully melt.
Add in sweetener, egg and coconut flour a little bit at a time.
Stir until fully-incorporated.
The mixture should be fairly wet, more so than a normal cookie batter would be. This is normal.
Place on a sheet of parchment paper and spread into the shape of a cookie. Top with remaining chocolate, which can be cut or broken into pieces.
Microwave for approximately 1 minute 30 seconds. Allow to cool before consuming.
