Ingredients
3mediumtomatoeschopped
1/2smallred onionsliced
1mediumcucumberchopped
3tablespoonsapple cider vinegar
Salt and pepper to taste
fresh basil, if desired
Instructions
Mix tomatoes, red onion and cucumber together in a bowl.
Add in apple cider vinegar and stir to coat all of the veggies.
Place in the fridge for anywhere from 4 hours to 1 full day before serving, to allow the vinegar to mildly pickle the veggies.
Store in the fridge in an air-tight container for up to a week.
