Ingredients
4mediumsweet potatoes
12ozchicken apple sausageI love the Aidell's brand, which is Whole30 compliant
2mediumapplesI like the tartness of mcintosh apples
2tablespoonsbutter or ghee
1/4teaspooncinnamon
Instructions
Wash sweet potatoes, then poke with a fork in several places. Microwave for 5-8 minutes, or roast in the oven at 400F for 45-50 minutes, or until tender all the way through. Remove from microwave or oven and allow to cool.
While sweet potatoes are cooking, slice chicken apple sausage and cut apples into cubes.
Add to a pan over medium heat and cook until the apples begin to soften. If using Aidell's chicken sausage, it is already thoroughly cooked. If using another brand, be sure to cook until done, if necessary.
Slice cooled sweet potatoes down the center and stuff with sausage and apple mixture.
Top with a spoonful of butter or ghee and a sprinkle of cinnamon. Enjoy!
