A spicy and flavorful hot beverage, this coffee-free cinnamon vanilla pumpkin latte is the perfect fall drink! Low-carb, sugar-free, Paleo, vegan and dairy-free.
So I’m sure everyone and their mother says that fall is their favorite season, but I can seriously say that there is something so magical about this particular change of season that really makes my heart happy.
Pumpkin, cinnamon and vanilla are definitely three of my favorite flavors, so I knew this fall it was time for a delicious drink that encompassed all of them! It turns out that it was not too difficult to make something that really let all three flavors shine.
Plus I know I can’t be the only one who sometimes wants a warm beverage at bedtime, and caffeine-filled drinks just don’t work for me in the evening, or even in the afternoon for that matter.
So out of my longing (ok, maybe more like desperation) for my favorite fall flavors, this coffee-free cinnamon vanilla pumpkin latte was created!
It’s one of the simplest recipes I have ever made also. Plus it’s surprisingly low in carbs, considering that it is loaded with delicious real pumpkin!
All you have to do is add some canned pumpkin, cinnamon, vanilla bean powder or vanilla extract and sweetener to some heated almond or coconut milk.
Mix it all together, either by hand or with an immersion blender, then top with some coconut cream and additional cinnamon, if desired.
If you’re looking for a higher-fat drink, you can also substitute the almond or coconut milk for half full-fat coconut milk, and half water. Then you’re all set for a delicious keto nightcap!
