In need of a quick snack you can whip up ASAP?
I’ve been having such a blast traveling around the country that some days I would rather spend more time exploring and less time making desserts in the kitchen.
Don’t get me wrong, baking and cooking are two things I love to do on the regular, but on adventure days…there’s no time to waste!
However, when we go out to see new sights, sometimes I do need snacks to fill me up (no one wants to see a hangry Deanna).
On those days, I reach for things like these no-bake chocolate coconut clusters because not only are they a delicious snack, they are incredibly simple to make in just a few minutes.

One of my favorite things about this recipe is that I already had every single one of the ingredients on hand. In fact, they’re pretty much always in my cabinets to begin with!
All you need is super dark chocolate, like 90% or 100% dark, coconut oil, a granulated sweetener of your choice, and unsweetened shredded coconut.
Start by melting the chocolate and coconut oil together in the microwave. It shouldn’t take too long. Next, add in the granulated sweetener, and mix until it dissolves.
Add in your shredded coconut until almost all of the liquid has been absorbed. You do however, want a bit of liquid left at the bottom of the mixture, so that it helps to hold together the base of the clusters, as you can see from the pictures.
Simply spoon the mixture one tablespoon at a time onto a baking sheet lined with parchment paper. After spooning out the mixture, you’ll likely be left with a bit of liquid at the bottom. Portion it out on top of the clusters, to help form the base.
Place into the fridge for 25-30 minutes, or until hardened.
I don’t like coconut, but I love the idea of these! Can I substitute the coconut for something else?
Yes, you can! If you don’t like the taste of coconut, I’d recommend using a refined coconut oil, which will have a neutral taste. You’ll also want to replace the coconut flakes with something like hemp seeds. The amount you will need may be different, so be careful as you’re adding them to the wet ingredients.
How long do these last?
I recommend storing them in the fridge in an air-tight container, where they should last a week or so. If you want to keep them longer than that, they store really well in the freezer in an air-tight container. They last up to a month this way.

- 2 tablespoons coconut oil
- 1 oz 90 to 100% dark chocolate
- 1 tablespoon granulated sweetener such as a stevia/erythritol blend
- 7 tablespoons unsweetened coconut flakes or as much as necessary to absorb most of the liquid
- Add coconut oil and dark chocolate to a microwave-safe container. Microwave in 20 second bursts until chocolate is melted. Stir between bursts. Do not overheat or chocolate will burn.
- Add sweetener to the melted chocolate and stir. Add in coconut flakes and stir to coat. If necessary, add in additional coconut flakes. You want most of the liquid to be absorbed, but leaving a little will help to keep the clusters together.
- Spoon mixture evenly into 6-8 piles on a baking sheet. Pour remaining liquid at the bottom over each pile. Place in fridge for 25-30 minutes or so until hardened. Move to an air-tight container and store for up to a week in the fridge.
