I used to get BLT sandwiches all the time my freshman year in college. My dorm was right next to a deli, and so they were my go-to for quick meals on the go. Looking back, that’s probably one of the many reasons I spent so many years in a fog.
Gluten has never really agreed with me, but yet sometimes I still want a simple sandwich! It’s sometimes much more work than I’m willing to put in, just to make a loaf of bread. Plus I’ve tried so many recipes that just fall apart or are too moist to really be considered sandwich material.
I decided it was time to up my game and make a delicious microwave sandwich bread recipe awhile ago, and figured what better way to test it out than to make a traditional BLT sandwich, like the good ol’ days!
The bread is so simple to make in the microwave. Each slice is ready in just two minutes, and all you have to do is make two slices for a full-size sandwich. If you have your other ingredients ready, just pile them on and dig in. Seriously, so easy!
Pro tip: cook your bacon in the microwave between two paper towels too, and you won’t have any dishes to wash except the one you used to mix the bread. As if I didn’t need any reasons to become lazier…
This sandwich did not disappoint, you guys. It immediately brought me back. Plus it was so filling, I probably could have stopped after half the sandwich, but I also couldn’t stop stuffing my face with the deliciousness.
Keto BLT Sandwich (Gluten-Free, Grain-Free)
- 2 slices cooked bacon
- 4 slices tomato
- 4 lettuce leaves
- mayo or mustard to taste
- 2 slices microwave sandwich bread recipe here
- Make two slices of keto sandwich bread.
- Spread mayo or mustard on each slice of bread.
- Layer bacon, tomato and lettuce on top of one slice, then place other slice on top. Enjoy!
