I am a sucker for simple recipes that don’t require much in the way of hands-on cook time. Crockpot recipes are one of my favorites, because they perfectly fit into the low-maintenance category. Plus you really can’t beat that fall-off-the-bone tenderness.
Plus who doesn’t love BBQ sauce? Even those following a ketogenic or low-carb diet occasionally like some of the sweet and sticky stuff. To those of you who fall into this category, you likely know about the G Hughes sugar-free BBQ sauce.
While I’m not a huge fan of the sweetener used (sucralose), it is a good option for those looking to remain low-carb while still enjoying a deliciously sweet meal.
To make these amazing ribs, you’ll want to cut the rack into pieces small enough to fit into the crockpot. You can layer them on top of one another, if needed.
Place them in the crockpot and add in 1/2 a chopped onions, a few cloves of garlic, a bit of water and a splash of BBQ sauce on top.
Set crockpot to high and allow to cook for approximately 4 hours. Alternatively, for those of you who work a full day, you could set them for 8 hours on low.
Once the time is up, transfer the ribs to a lined baking sheet. You can also transfer the onions to the sheet, if you desire. Preheat oven to 400F, and cover ribs on both sides with remaining BBQ sauce.
Cook in the oven until the sauce begins to caramelize. Remove from oven and allow to cool for a few minutes. Pull apart or cut into pieces (although you definitely won’t need a knife) and enjoy!
