This super-tasty seasoned cauliflower with caramelized onions makes the perfect dinner side dish! Low-carb, paleo, Whole30, dairy-free, vegan.

When I’m feeling lazy, sometimes I will just pop a package of frozen veggies into the microwave and be done with it. I love how convenient technology is when I’m in a pinch. With that being said, eating flavorless veggies day in and out gets tiresome after awhile.
If you’re looking for something easy but incredibly flavorful, then you will love this seasoned cauliflower with caramelized onions. It’s sweet, salty and spicy all at the same time.
The oven does all the hard work.
You’ll want to start by dicing the onion. Add that to a pan over medium low heat with some coconut oil. Cook until it begins to turn translucent and brown around the edges.
You want to keep the heat low to get them to caramelize. You don’t have to fully caramelize them though, because we will also be baking them in the oven.
Chop the cauliflower into small florets and lay out on a parchment paper-lined baking sheet. Toss with salt, pepper and chili powder, and add in the caramelized onions. Stir to coat. Bake until the cauliflower is soft.
Would this work with frozen cauliflower florets?
It would work with frozen cauliflower, but I think it would work best if the cauliflower was thawed first before roasting in the oven. I think you will find that the thawed cauliflower will have more moisture than if it were fresh, so the cauliflower may not roast as well, but it should still taste delicious!
Can I add other seasonings?
Of course you can! This recipe is great because the cauliflower and onions are neutral enough in flavor that any type of seasoning should work just fine!

Seasoned Cauliflower with Caramelized Onions
- 1 medium white onion
- 2 tablespoon coconut oil
- 1 large head cauliflower
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 teaspoon chili powder
- Dice an onion and add to a pan over low heat with 1 tablespoon coconut oil. Keep heat low and cook until onion begins to turn soft and translucent, about 5-7 minutes.
- Preheat oven to 375F.
- Chop cauliflower into florets and lay out onto a baking sheet lined with parchment paper.
- Top with 1 tablespoon melted coconut oil and sprinkle with salt, pepper and chili powder. Toss to coat. Add in onion and mix one more time.
- Place in the oven and bake until cauliflower is soft, approximately 25-30 minutes.
