Are you a fan of all things fall? Apple picking, comfy sweaters and toasting marshmallows over a fire? Me too! Unfortunately, a lot of traditional fall things seem to involve eating sugar-laden and somewhat unhealthy foods.
Sometimes indulging a little is expected when there are things like caramel apples magically finding their way into your hands (I mean, it’s a fruit, right?).
But if you know eating it will completely kill your entire diet and send you into a tailspin, well there are better ways.
Like this apple cinnamon mug cake with caramel sauce. It’s all the fall things you want, but in a form that is slightly kinder to your waistband.
I’ve made lots of mug cakes in the past few years, but this HAS to be one of my favorites. It’s so moist, spicy and sweet that it is certainly the mug cake that comes to mind first when I think back on all the ones I’ve made.
Let’s talk recipe, shall we?
So to make this marvelous mug cake, you’ll want to start by whipping up a few things. You can prep them ahead of time, or make them right before you want one of these, totally your choice.
You’ll first want to slice up part of an apple, then saute it in a pan with some butter and cinnamon until it’s nice and soft. At this point, you can either toss them in the fridge for later, or make the mug cake right away.
You’ll also need a batch of caramel sauce. There are a few options here, you can make my homemade sugar-free caramel sauce (HIGHLY recommended), or you can opt for a store-bought version. Either works super well.
To assemble the mug cake itself, you’ll mix melted butter, coconut flour, egg, sweetener and cinnamon together. Toss in some of the cooked apples, then pop into the microwave for just a few minutes.
Top with some more apples, and a bit of the caramel sauce and you have a seriously killer dessert. Hot tip: don’t share, keep it all to yourself 🙂

Apple Cinnamon Mug Cake with Caramel Sauce (Low-Carb, Paleo)
Ingredients
For Apples
- 1/2 apple cubed or sliced
- 1/2 tablespoon butter
- 1/8 teaspoon cinnamon
For Cinnamon Mug Cake
- 2 tablespoons butter
- 2 teaspoons coconut flour
- 1 egg
- 1 tablespoon sweetener
- 1/4 teaspoon cinnamon
For Caramel Sauce
- 1/4 batch caramel apple sauce click here for recipe
Instructions
To cook apples
- Melt butter in a small pan over medium heat, and add in apples.
- Cook until apples soften, approximately 3-4 minutes.
- Top with cinnamon and mix until well-coated.
To assemble mug cake
- Melt butter in a ramekin or mug.
- Add in coconut flour and mix until no more clumps.
- Add in egg and mix again until egg is fully incorporated.
- Mix in sweetener, cinnamon and the cooked apples.
- Microwave for 90 seconds.
- Allow to cool for a minute, then top with caramel sauce and enjoy.
