I have been a fan of Indian food for as long as I can remember. I’ve also been a huge fan of LOTS of spice for a very long time. I’m positive that on more than one occasion, I have made dinner for others and added a little more spice than they could handle.
I do a lot of eye-balling when it comes to measuring out spices (who needs measuring spoons, anyway??), and it can sometimes get a little out of hand. But that is just how my tastebuds prefer their meals, what can I say?

I know how hard it can be to find pre-made nightshade-free spice blends, especially when it seems that ALL of them just list “spices” on their label. That is usually an indication that they contain nightshades.
Luckily, it’s really simple to make your own garam masala, without those undesirable ingredients.
If you want to take the easy way out here, you can simply buy the pre-ground version of each spice required. For this recipe, you will need cumin, coriander, cinnamon, cardamom, nutmeg, cloves and black pepper.
Simply mix the ingredients together in a container, and you’re good to go!
If you feel like taking the flavor profile up a notch, you can purchase fresh, whole spices from an Asian grocery store or online. Use a coffee grinder (make sure it is cleaned out first!), and simply blend the spices one-by-one.
Measure out the ground spices after grinding and add to your container. You can use a mixture of ground and whole, if you can’t find all of them. Just know that the fresh will have a stronger flavor.
