A super-creamy cilantro lime chicken dish, made using just one pan, some chicken, a can of coconut milk, lime juice and cilantro. Low-carb, ketogenic, dairy-free, Paleo, Whole30.
This creamy cilantro lime chicken is one of the first recipes I came up with, during my first few days on keto. It’s downright delicious, and incredibly easy to make. What’s nice about it is that it is really versatile.
It can act as a fantastic main dish, perfect to pair with some veggies and garlic cheddar biscuits, or it can act as a topping for a salad, such as the Mexican-inspired salad that I made to pair with mine.
All you will need for this recipe is a can of full-fat coconut milk, some cilantro, several limes and your chicken. If you want to add extra fixings, go for it. You will begin by simmering the coconut milk until roughly half of the liquid evaporates. This will take about 8-10 minutes over medium heat. Next, add in your chicken and allow it to cook in the coconut milk.
While that is cooking, juice several limes (2-4 depending on the amount of lime flavor you like). Add the juice to a blender, and add in half of a bunch of cilantro. You can leave the stems on.
Blend until it forms a thick and delicious cilantro lime sauce, then add it into the skillet. Continue to cook until the coconut milk has reduced to a sauce-like consistency. If you plan to eat the chicken atop a bed of lettuce, remove from heat and allow the sauce to cool for 10-15 minutes, so it does not wilt the lettuce.
I hope you all enjoy this recipe. It’s super simple and very filling. It makes a fantastic dairy-free sauce, and you do not have to worry about the coconut taste. The flavor is entirely covered up with the cilantro and lime flavors.
My coconut-hating husband did not complain. For those of you who are vegan, you can substitute the chicken for tofu or another meat substitute, and I have no doubt that it would still be just as delicious.
Some of you might be looking at the pictures and thinking “that looks really oily”, but let me assure you that the fat in coconut milk is one of the healthiest kinds of fat there is. Saturated fat has previously had a bad rap for being bad for your health, but it actually does the opposite.
Coconut milk can help lower your cholesterol, regulate blood pressure and prevent heart attacks. Saturated fats are necessary for our bodies to function properly and prevent heart disease. So go on and eat the sauce, it’s delicious and great for your health!

Creamy Cilantro Lime Chicken (Whole30, Gluten-Free, Grain-Free, Dairy-Free, Low-Carb)
Ingredients
- 1 lb chicken breasts or thighs deboned
- 2 limes juiced
- 1/2 bunch cilantro
- 1 can full-fat coconut milk
- 4 cloves garlic
- pinch salt I love this Himalayan pink salt
Instructions
- Simmer can of coconut milk over medium heat for 5-10 minutes, or until it begins to come to a low boil, stirring occasionally.
- Add garlic, lime juice, cilantro, salt and pepper to blender to create cilantro lime sauce.
- Add in cilantro lime sauce to skillet and stir to combine.
- Allow all ingredients to simmer in skillet until chicken is thoroughly cooked, another 5-10 minutes. By this point, the sauce should be nice and thick.
