So if I had to pick one of my recipes that I absolutely love, but don’t make nearly often enough, it would DEFINITELY be my keto microwave sandwich bread. It’s so simple and quick, and yet somehow I just don’t even think to make sandwiches these days.
On keto, I’m so quick to simply forgo the bread, bun or wrap, and eat the fillings by themselves. This is pretty much your only option when eating out, so for some reason I have this ingrained that I can’t eat bread.
However, that is definitely not the truth! There are tons of low-carb breads out there, with even more being developed all the time.
This keto pesto chicken sandwich is one of my favorite ways to enjoy the microwave sandwich bread. The keto BLT sandwich is definitely one of my other favorites.
To make this tasty sammich, start by whipping up a batch of microwave sandwich bread, which will set you back just a few minutes.
You can also cook up some chicken breasts, or use precooked chicken for an even quicker meal, because who doesn’t love that?
You could also go for the stuff from a jar. If I’m being honest, I used the jar stuff when I made this the first time, because sometimes I’m just too lazy.
Now it’s time for the fun part, simply layer your chicken, tomatoes and mozzarella. Feel free to go crazy here and add some fresh basil, arugula, or really any other fillings you can think of.
If you feel like getting fancy, you could even add some seasoning to the bread, like some rosemary or Italian seasoning. YUM!
Keto Pesto Chicken Sandwich (Low-Carb, Gluten-Free)
- 1 batch microwave sandwich bread click here for recipe
- 1 tablespoon pesto
- 1 thinly-sliced chicken breast, cooked
- 1 medium tomato sliced
- 1 oz fresh mozzarella, sliced
- Cook one batch of microwave sandwich bread, which makes two slices.
- Spread pesto on one side of each slice of bread.
- Place one slide of bread with pesto side up. Pile cooked chicken, tomato slices and mozzarella on top.
- Place second piece of bread on top with pesto side down. Slice in half and enjoy!
